CHOCOLATE CAKE

This delicious chocolate cake is inspired by the one served at the Rosendal café in Stockholm, but we’ve tweaked the recipe here and there to create our own. It’s a rich, wonderfully chocolaty cake, and the use of good quality cocoa is important. Choose your favorite cocoa and adjust the amount to suit you. Wrapped in aluminium foil, this cake will keep fresh for a week.

14 tbsp (200 g) butter

4 eggs 2⅓ cups (550 ml) sugar

4 tsp vanilla sugar

1⅔ cups (400 ml) cocoa

1¼ cups (300 ml) all-purpose flour

pinch of salt flakes

Ganache

3½ oz (100 g) dark chocolate

⅜ cup (100 ml) whipping cream
